What is High Pressure Processing?

HPP is a cold pasteurization method. Instead of cooking food to make it safe, we put the finished, sealed package under extreme water pressure. Pathogens do not survive it — flavor, color, and nutrition do.

Inside a cycle

Every run follows the same five stages. There is no heat, no radiation, and no additive anywhere in the process — just water and pressure.

Your product is already filled and sealed in its final flexible package. Nothing is opened, decanted, or re-handled.

A steel vessel fills with potable water at refrigeration temperature. Water is the only thing touching your packaging.

That is roughly six times the pressure at the deepest point of the ocean, applied evenly from every direction at once.

The pressure collapses the cell structures of pathogens and spoilage organisms while leaving small molecules — flavor, color, vitamins — untouched.

HPP vs. thermal pasteurization

Both deliver food safety. Only one of them leaves your product tasting the way you formulated it.

What HPP does well

High-moisture, refrigerated, low-to-mid acid foods in flexible packaging: juices, dips, RTE proteins, sauces, and pet food.

What HPP will not fix

It is not a shelf-stable sterilization step, it will not rescue a contaminated raw ingredient, and it does not inactivate all spores.

Packaging matters

Packages must flex slightly under pressure. Rigid glass, metal cans, and headspace-heavy containers are not compatible.
